Instructions: Makes 4 servings / 4-8 oz. Glass Ramekins
- Melted butter, 3 tbsp (brush inside ramekins, add 3 tbsp white sugar, to coat inside of ramekin, pour sugar into next ramekin and so on. - 3 tbsp melted salted butter - in skillet, on medium heat. - 3 tbsp flour – sprinkle in flour mix well. - ½ cup whole milk – add milk, continue to stir (heat off) stir until forms ball, transfer to bowl. - Using rubber spatula, add 1 tbsp grated orange rind, stir in 2 tbsp Grand Marnier, mix until well incorporated. - 4 egg yolks (stir in) using a rubber spatula to fold in yolks. - Add 1 tsp pure vanilla extract, fold in. - 4 egg whites, whisk egg whites in large bowl, with wire balloon whisk, whisk until foamy and slightly thickened, add half of the sugar, about ¼ of cup. Continue whisking until thicker, add remaining ¼ cup sugar, whisk until meringue has soft peaks, however not too stiff, consistency of shaving cream. - Using a rubber spatula, add ½ of the meringue into egg mixture, folding ingredients gently, continue until all incorporated, add remaining meringue folding gentle, long slow folding from bottom of bowl to the top, fold until egg whites disappear into the yellow batter. - Spoon Grand Marnier batter into each ramekin, filling batter to ¼ inch from rim, use spoon to stir slightly to even batter. - Place on foil lined baking sheet, bake at 400 degrees for approximately 15 to 16 minutes (note, do not open oven door) - Place souffle on doily lined plate. Pour ½ cup of powdered sugar into a sifter and gently dust the top of each souffle. - Serve with a side of Crème Orange Anglaise.

Crème Orange Anglaise Makes 2 cups 2 cups heavy cream in kettle (medium heat) 2/3 cup white sugar 4 egg yolks 1 tsp pure vanilla extract - Whisk all ingredients together, place in saucepan over medium heat,
using rubber spatula, stirring, while running spatula across the bottom of the pan, continue to heat until thickened. (Do not boil or simmer), shut off heat.
Dessert submitted by Brian Kesanen, Executive Chef, The Vineyards, California Armenian Home , for the Culinary Knockout Competition. - Strain sauce to remove any lumps, stir in 1 tsp grated orange zest and 2 tbsp fresh squeezed orange juice. - Serve sauce in goosenecks for each souffle, on doily plate. (Cold or slightly warm) NOTE: Guest - Use spoon to poke a hole in the center of the souffle and pour sauce into the center.
